Whey Protein Concentrate: A Brief
Summary

On average, high quality milk is 27 percent protein, 37 percent lactose (milk sugar),
and 30 percent fat. The remaining 6 percent is calcium, other minerals, and ash.
Thus, what is called “4 percent milk” or “whole milk” is a high fat food, because the
percentage determination includes the water, and milk is mainly water. Its label is
largely a commercial fiction. It is not a prime food, especially when trying to
increase muscle or to reduce body fat.
What is called “2 percent milk” still contains more fat and more lactose than
protein. It is not a prime food either.
Skim milk has near zero fat but still contains a high amount of lactose. Skim milk
powder, which some people use in cooking and as a low-fat protein source, is the
worst of milk, because more than half of it is lactose.
Up to 30 percent of adults have varying degrees of allergic responses to lactose,
because lactase, its digesting enzyme in the gut, declines rapidly during childhood.
Humans and their pets are the only adult animals that drink milk.

There at least 14 different proteins in milk split into two groups, caseins and wheys.
Casein represents about 80 percent of milk protein. Casein has poor results in
producing lean mass in athletes, and in hospital studies of muscle loss.*
Whey represents about 20 percent of milk protein. Whey has superior results to
any other protein, including eggs, meats, fish, soy, nut, pea, rice, and other plant
proteins, in producing lean mass in athletes, and muscle in hospital
studies. Recent genomic research attributes much of the benefit of whey protein
concentrate to two unique proteins, beta-lactoglobulin (60percent of whey protein),
and alpha-lactalbumin (25 percent), that together regulate the activity of more than
200 human genes.
To legally call a product whey protein concentrate it can have anywhere from 29
percent to 89 percent whey protein. At the bottom end of that scale (29 to 49
percent protein), you can work out that the other 50 to 70 percent is almost all fat
and lactose. You will see a lot of this cheap whey for sale in bulk stores and
discount markets. Leave it on the shelf. The new shirt you buy with the money
saved will not look good on a pumpkin.
Near the top end of the whey scale (70 to 89 percent protein), only 10 to 25 percent
of the mix is fat and lactose. That’s where you want your whey to be.**
Whey protein concentrate is further extracted to become whey protein isolate (90 to
95 percent protein). The higher price of whey isolate, however, is money wasted.
Both high-end concentrate and isolate are fast proteins, that is, they are very rapidly
absorbed compared to casein or meat or fish proteins. But, until the advent of
recent molecular genetics, we could not understand why whey isolate (90 to 95
percent protein) and high end whey concentrate (70 to 89 percent protein) produced
identical results in increased free amino acid pools in the body, increased muscle
protein formation, and reduction of fat deposition. Now we know that, after most of

the last few percent of extraction in expressing the genes that build muscle and
inhibit adiposity. The structure of the proteins depends on the quality of the milk.
Quality, Quality, Quality!
Half the dry weight of your body is protein, over one hundred thousand different
proteins, each of which is precisely determined by gene expression. The quality of
your proteins determines both the quality and the quantity of their effects on the
genome. Quality of the proteins in milk depends on the nutrition of the cows and the
method of protein extraction.
Nutrition of the Cows
Cows are ruminants, continuous grazers. They have a rumen, a miraculous
fermentation tank in their gut designed by tens of millions of years of evolution to
digest grass and humus (grass that has died and broken down to become a stable
mat for the growing grass). The rumen is designed precisely to ferment grass. In
order to work properly it has to stay at a good level of fermentation continuously.
Unlike the human gut, which operates intermittently by acid, the rumen is acid
neutral, and requires constant grazing and a constant level of fermentation to remain
healthy and support high quality protein production.
Over the last 50 years, the economics of commercial farming in the US has
progressively eliminated most pasture feeding. To make a living, most farmers have
to keep their cows in feedlots most of the time, and feed them on cheap hay, corn,
barley, soybeans and fat. These feeds are much cheaper than pasture, but require
an acidic gut to digest them. The feedlot cows are also fed only intermittently. So
most dairy farming places a large intermittent and acid load on a rumen and liver
that were not designed for it. Some places, notably New Zealand, still pasture feed
most of their cows.***
The diet and confinement of US cows has produced most of the problems that now
beset American milk production. Feedlot cows rarely go four months without
infection, requiring constant dosing with antibiotics. Feedlot cows produce milk so
poorly that production has to be stimulated with hormones. Feedlot cows last an
average of only four years before liver and other problems from acidic food get them
switched out and turned into beef. No surprise that feedlot cows produce inferior
milk.
To give you a quick perspective on how bad it has become, in March 2010, the U.S.
Department of Agriculture published new access to pasture rules for the best-of-thebest, organic cows producing high-quality organic milk. The new rules state that
organic cows have to be out on pasture for not less than 120 days per year, and have to receive at least 30 percent of their feed by pasturing during the grazing season. At least they recognize the  right way to raise cows. But what a minimal standard! And that’s for the-best-of-the-best, so you can imagine what’s happening to the rest of the cows (85 percent). I hope I have convinced you to buy whey protein extracted from the milk of grazed animals for your health’s sake.

Extraction of the Whey
Whey is extracted from milk by numerous methods. Most common use acids or salts, and heat. All these strategies denature the whey. Denaturing involves numerous breakdowns in the protein, but here I will mention only two of the main faults.
First, we now know from gene expression studies that undenatured whey contains many bioactive compounds including antibodies and enzymes that have multiple beneficial effects in humans. When the whey is denatured, these bioactive compounds are destroyed.
Second, undenatured whey contains numerous di-peptides (amino acid pairs) and tri-peptides (amino acid triples). These are keys that fit specific genetic locks in the body to turn on protein functions. If the whey is denatured, the keys are broken down into single amino acids and no longer work.
It’s true that the milk industry didn’t know of these problems until recent science uncovered them. But it is expensive to change your technology, and its not happening in this economy. Undenatured whey protein is extracted by cold-membrane filtration. It costs more, but it’s the only whey to go.

Breast cancer 600% higher in women with low vitamin D

(NaturalNews) Vitamin D deficiency is a major cause of breast cancer among women, according to a recent study published in the American Journal of Clinical Nutrition. The study, authored by a team of scientists from various organizations, reports that women in Saudi Arabia who have low vitamin D levels have six times the risk of having breast cancer than women with higher levels. Researchers urge others to increase vitamin D intake for a myriad of life-saving health benefits.

The case-control study analyzed data from 120 breast cancer cases and an equal amount of controls. The study found that Saudi Arabian women in the lowest vitamin D category, less than 25 nmol/L (10 ng/ml), had six times the risk for evasive breast cancer as people in the highest category of vitamin D status, greater than 50 nmol/L (20 ng/ml). Women in Saudi Arabia, even though they reside in a high UV sunlight exposure area, have very low levels of vitamin D. This is due to a modern indoor lifestyle, darker skin types, cultural practices of dress and the fact that the food supply is not fortified with vitamin D like it is in Canada and the USA.

The data collected for the study indicated that breast cancer cases had significantly lower serum concentrations of 25-hydroxyvitamin D [25(OH)D], at an average of 9.4 ng/mL, than did controls, which averaged at 15.4 ng/mL.

"These results are not surprising" says Dr. Cedric Garland, a Professor from the UCSD Department of Family and Preventive Medicine. "There are numerous studies supporting that women need vitamin D levels exceeding the Institute of Medicine (IOM) guideline of 50 nmol/L (20 ng/ml) to help prevent breast cancer." Arash Hossein-nezhad, MD, PhD, Michael F. Holick, PhD, MD of the Boston University Medical Center published an article, "Vitamin D for Health: A Global Perspective," detailing the health benefits associated with vitamin D. Their article outlines how vitamin D deficiency continues to be a problem in today's society and the risks associated with it. "Because body fat can sequester vitamin D, it is now recognized that children and adults who are obese require 2 to 5 times more vitamin D to treat and prevent vitamin D deficiency," writes Hossein-nezhad and Holick, suggesting that America's disturbing obesity rate may mean that a growing number of citizens are suffering from vitamin D deficiency, whether they realize it or not. Vitamin D can be found naturally in very few foods. Wild salmon and mushrooms exposed to UV rays are two of the scarce natural food items containing vitamin D. Despite this, Hossein-nzhad and Holick's article goes on to list other available sources of vitamin D and how to increase one's uptake of the important nutrient:

"Vitamin D intake can be increased by eating foods fortified with vitamin D. A recent systematic review found that food fortification with vitamin D (especially in milk) is effective in significantly increasing 25(OH)D levels in the population.7, 252 Other foods include some cereals, juices, other dairy products, and some margarines. A mean individual intake of approximately 11 µg/d (440 IU/d) from fortified foods (range, 120-1000 IU/d) increased 25(OH)D concentrations by 7.7 ng/mL, corresponding to a 0.48-ng/mL increase in 25(OH)D for each 40 IU (1 µg) ingested." Hossein-nzhad and Holick's paper finishes with words of advice, urging readers to increase the amount of vitamin D they intake: "There is potentially a great upside (in terms of improving overall health and well-being) to increasing serum 25(OH)D levels above 30 ng/mL. An effective strategy to prevent vitamin D deficiency and insufficiency is to obtain some sensible sun exposure, ingest foods that contain vitamin D, and take a vitamin D supplement." Part of the problem seems to be milk from modern dairy farms, where cows are milked about 300 days a year. For much of that time, the cows are pregnant. The later in pregnancy a cow is, the more hormones appear in her milk.
Milk from a cow in the late stage of pregnancy contains up to 33 times as much of a signature estrogen compound (estrone sulfate) than milk from a non-pregnant cow.

Research unveils new health benefits of vitamin C.
When the cough, sniffles, and aches start, many people will load up on extra vitamin C. Helping boost the immune system is a familiar benefit of the vitamin. But do you know what else vitamin C is good for? Or how much vitamin C you need?
Vitamin C, or ascorbic acid, is a water-soluble vitamin, meaning that it doesn’t build up in body tissues for later use like fat-soluble vitamins (A, D, E, and K). Rather, the body uses vitamin C when it needs it and then flushes the rest out. The benefit of this is that there is very little risk of toxicity from supplementation. However, that also means we have to constantly supply the body with vitamin C to reach effective concentrations to reap the health benefits it can provide.
How much vitamin C do you need? 
Humans—along with primates and guinea pigs—are not able to produce the valuable vitamin. Instead, we must get it from our diets (bell peppers, kiwi, citrus fruits, etc.) or through supplementation. While the RDA is set at 75 milligrams per day for women and 90 milligrams per day for men, many scientists advocate doubling the RDA to 200 milligrams per day. In fact, doses of more than 1,000 milligrams have been shown to contribute to plasma and tissue saturation, optimizing the antioxidant properties of vitamin C.
Surprisingly, studies suggest that more than a quarter of people in the US are marginally deficient (not even reaching the RDA amount), and up to 20 percent are severely deficient in some populations.

By not getting adequate amounts of vitamin C, there are health benefits you could be missing out on. Here are four areas of health where the vitamin plays a vital role you may not be aware of:
1. Heart Health: Because of vitamin C’s ability to combat oxidative stress, it can have significant benefits for heart health, particularly in maintaining the integrity of the cells that line blood vessels. Cardiovascular problems can develop when these cells become damaged. For example, when the cells dysfunction, blood vessels can become very stiff, weakening their ability to keep blood pressure under control and deliver blood to various parts of the body.
In 2012, researchers from John Hopkins University (3) reviewed over 25 published clinical trials and found statistically significant improvements in blood pressure in subjects who supplemented with 500 milligrams of vitamin C. For those identified as having high blood pressure, the drop was even more significant.
2. Skincare: Oxidative stress from environmental (UV exposure, pollution, toxins) and internal (stress, poor diet, genetics) sources can cause damage to your skin and accelerate skin aging. Because of vitamin C’s antioxidant properties and its ability to stimulate collagen synthesis, it can greatly contribute to the health of your skin. In fact, the skin layers contain high levels of the vitamin, although it tends to decrease with age and exposure to oxidative stress.
Oral supplementation of vitamin C can increase levels within the skin; however, greater benefits have been seen in topical application. These benefits include increased skin hydration and decreases in the appearance of wrinkles and fine lines (4).
3. Respiratory Protection: One of the easiest avenues for toxins and chemicals to enter the body is through inhalation. Whether from car exhaust, cigarette smoke, or fumes from cleaning products, we breathe in hundreds of pollutants daily.
Vitamin C is present in high concentrations in the respiratory tract. One study found that the amount of vitamin C in the fluid lining the respiratory tract doubled just two hours after supplementation (5). With its high concentration in the respiratory system, vitamin C is your body’s first defense against the harmful chemicals that enter the body through the airway. These toxins can act as free radicals and attack your cells. As an antioxidant, vitamin C reacts with the chemicals and neutralizes them before they can harm cells.
One of the best examples of why vitamin C is needed in the defense against respiratory exposure to toxins is in cigarette smokers. In fact, the RDA for vitamin C is higher for smokers than for non-smokers because of the extra toxins smokers inhale and the protective properties of vitamin C in the lungs.
4. Exercise Recovery: Physical activity can be very stressful on the body both metabolically and mechanically. During strenuous activity, the body demands energy to perform, ultimately leading to increased oxidative stress and tissue breakdown. If the body is not supplied with proper nutrients to recover, muscle soreness, fatigue, and decreased physical performance can result.
In a four-week clinical trial, researchers found that 250 mg of vitamin C significantly reduced muscle damage and oxidative stress markers in trained female athletes (6). Reducing exercise-induced oxidative stress and muscle damage could allow athletes to recover faster and improve their endurance and power output.
With the growing body of research illustrating the many roles vitamin C plays in our health, its important to make sure that we are supplying the body with adequate amounts. Remember, our bodies can’t make the powerhouse vitamin so be sure to get enough from diet and through supplementation.

VASCULAR SURGEONS WRITE A DAMMING REPORT ABOUT STATINS

Two top vascular surgeons have published a damming report on statin medications. 
Dr Sherif Sultan, Consultant Vascular and Endovascular Surgeon, Honorary Senior Lecturer at NUI Galway, Ireland, and Dr Niamh Hynes, Clinical Lecturer In Vascular & Endovascular Surgery at Western Vascular Institute, Ireland have conducted a critical review of the benefits and risks associated with statin medications.

In summary, their paper highlights the following key points: 
  • Not only are statin medications failing to impact on our most prevalent disease, but they are causing more harm than good.
  • Cholesterol is crucial for energy, immunity, fat metabolism, leptin, thyroid hormone activity, liver related synthesis, protection from stress, adrenal function, sex hormone syntheses and brain function. 
  • Only middle aged men with coronary heart disease benefit from taking statins, but even in these cases statins may only work in the short term and should be stopped before adverse effects can take hold.
  • High cholesterol levels have been found to be protective in elderly and heart failure patients.
  • The statin industry is the utmost medical tragedy of all times. 
  • A government report in Canada found an overestimation of benefit and underestimation of harm where statins are concerned.
  • Statins are associated with triple the risk of coronary artery and aortic calcification.
This is another scientific paper that should immediately stop the widespread prescription of statins, however, it has gone almost completely unnoticed. In fact, I only became aware of it because it was sent to me from my friend Clare Harris from the Stopped Our Statins support group.
